Hi everyone.
Sorry for my English. I write from the city of Cagliari, Sardinia Island, Italy.
I am one of the first owners of a Smoker Bradely in Italy (my is a BDS 6 racks). I've joined the forum to learn a lot from you. We do not have the great tradition of homemade smoking food as you have in North America, but we are learning with great enthusiasm. And next Thursday, August 19, will arrive in Montreal to stay in Quebec for three weeks. Of course, I'll try all your dishes, smoked or not.

Welcome!   My wife was born in Pisa, Italy.  (her father was stationed there on a US military base)
We've been over there a few times in the Northern portions.  Beautiful beautiful country/people.

The closest thing to smoked meat we had it Italy was in Bracciano:   Porchetta Panino 
It was fantastic.  Although I don't think you'll find any Chestnut Bisquettes for your Bradley.  :D
