Hi folks, I'm Ian, been butchering 38 years but absolutely new to smoking.

As said, ask any questions you might have. And, don't be bashful about providing any meat and butchering info you might have.

My son in law comes from a little way north of London. Looks like you're quite a bit farther north - near the A1?
