Hungarian Hot Paprika Sticks

Some talk about emulsification  so i will show you on the sticks. This is Gregs spicy sticks recipe i just added some hot Hungarian paprika with it.
Did the 5 lb batch of 80/20 GB


Mix all done with 3 T furmento (I ran out of ECA)



Seasoning added and ready to emulsify (before)



After





Some say keep it cold add some ice.....Why add extra water?
Keep the mix cold the easy way  ;D


I do this on my grinder throat also.



Ready to go.





Getting 140* no smoke for 2 hours. PID working to 175*

Would you PLEASE move that d@mn jar of Iceman's sauce out of the camera shot?  Some of us are scraping around on our last jar and don't need to be reminded that you have lots just laying around. :D

Pretty much just means to get the sticks or sausage to dry and age (marry up) to room temp before fridge.
