FLA Smokeout Sausage

The Florida Smokeout is getting close so i decided to make some smoked Landjager sausage. This is a 5 pound batch.

My Landjager mix with 1 tsp maple cure.



1/4 cup + 2 T soy protein con



Mixed



Stuffed & twisted.





Resting some to dry the casings.

Those really look good.  What size casing did you use?

The casing is natural hog 28mm.

Have them in the smokehouse.

I went to my neighbors house while the Landjaeger was hanging. Time and temp got away from me  :-\

This is what happens when you get a high IT........Fat-out  :-\

These got taken to the hollow, the critters will eat good tonight.

Oh man...... so sorry for your loss. Goes to show, it even happens to the best once in a while.  :(
