Making 5 pounds of ground hillbilly jerky today. As soon as my camera batteries charge i will take some pics to post.

Here is a photo tutorial on the way i make GB jerky. This batch is 5 lbs of 80/20 GB

Mixed 1 level tsp cure #1 to 1/2 cup cold distilled water. This is for a 5 pound batch.



5 Tbsp of the hillbilly mix to the cure liquid.


Mixed the liquid to the meat by hand, and into the stuffer. I fit all 5 lbs into the LEM. The secret?.....no air pockets.





The other secret to extruding jerky is COLD. I wrap my frozen sports wrap around the stuffer. Frozen pack in front and back.



Keeping the meat cold is the key to good extruded jerky. Yes you will have some side blow outs, just the nature of the game. WHAT YOU SAY?
You have major blow out? Remedy for next time......Cut back on the water before you add cure and mix.



Here i have the jerky on racks to keep cold in fridge. Doing this will allow the cure and SPC to bind up the meat before smoking. Do from 6 to 12 hours.





I made a 1/4" thick slab too. I seen 2.9oz GB slab in the store for $5.99.......... WOWSERS



Later it all gets hickory smoke.

Now that really looks good! Do you get heat into the Bradley from the Lil Tex? Or are you using the Bradley for heat?

The Traeger dont have enough CFM to really just use it with out the need to PID from the Bradley. However installing a 4 or 6" 6 CFM fan in the vent hose will take care of the problem with cabinet IT.

I turned the controller to 225* and the IT only got between 101-109* Thus i needed to use the PID
