turkey drumsticks?????

Had some Turkey drumsticks at a local festival and kids want me to smoke some???   Anyone ever done this??   How long do you think they will take?

I would cure them with a brown sugar cure or maple sugar cure. If you do a search, you should be able to find one on the boards using Mortons tenderquick. I use a brown sugar cure but, High Mountain makes a Wild Turkey brine that should work good.
As far as time to smoke/cook, turkey drumsticks can vary in size. I would smoke for about 2.5 hours - 3 hours with apple for first choice. I would smoke at 200-225 F planning on at least 3 hours. With poultry I would suggest 165 degrees internal temp.

I did a batch some time ago. They came out real good. The cooking time depends on how big a load you have, as well as weather conditions. I did six legs, smoked at 210-225 degrees F, using three hours of apple. It took 3.5 hours. http://www.bradleysmoker.com/forum/topic.asp?TOPIC_ID=795

Just do a search on this forum, or go to http://www.susanminor.org/ to locate brines for poultry. Also when you are smoking a tray of small cuts of meat, such as chicken or turkey parts; check the internal temperature of at least one or two other pieces on each tray, with an instant read thermometer. The ideal internal temperature is 165 degrees, but if the pieces are between 160-165 degrees, they are done. The temperature will continue to rise after you pulled them from the smoker.
