Looks great!  How low does your cabinet stay when you cold smoke?

Well I usually pack it with a large amount of ice mixed with salt and water and take the steak directly form the refrigerator to the smoker. I then move directly to a preheated grill. I would venture to say that it stays in the 50-55 Fahrenheit range.

been looking for this damn thread now for 2 days to show my wife.  the cold smoking section, go figure.

steaks look great, and i am definataly doing up those onions.

Those look great!  Nice job.
I love cold smoking steaks before grilling.  I find that they are pretty good going right to the grill but they're even better if you put em back in the fridge over night.
