Corned Beef Brisket Point

I have had this corned beef brisket floating around in the wife's freezer for awhile. So I got it thawed out and stood there scratching my head as what to do with it. Really didn't want to make pastrami just yet. So I made a few calls to some of the guys on the forum. Got a few Idears and it kinda went like this. Took the 2.82 pound chunk of meat and flopped it in a stock pot with water for 3 hours changed the water every hour. to cut some of the salt in it. Then loaded it in the Bradley at 250º, gave it 2 hours of Hickory smoke and after 5 1/2 hours the IT was at 157º. I pulled it out let it rest for 20 minutes under foil then sliced. Looked like this:



I don't know why but it seems we always have the same thing for supper when I am taking plated pics. Hash-browns with cheese, Corn, and Peaches and Pears. Oh Well it works for me!! It sure tasted good.

Real simple she has hers which I sometimes store things in and I have mine which she is not allowed to even open most times. Mine is the meat freezer 18 cu/ft her's is the all others 14cu/ft.

Sure looks good to me.

We have 2 refrigerators and one BIG (23 cu ft) chest freezer.  Wish the wife would own one - she says they are all mine.   ???

Thats an awful nice hunk of meat to have laying around in the freezer.  I just bought a 5lb at sams Yesterday. Cant wait to smoke it on Sunday.  Pastrami Time!
Is it bad if my wife refers to the smoker as "The Mistress"?

Actually I think there is another one floating around in her freezer as well. This one was a really small chunk when all was said and done. Not that it made any difference on the taste it tasted great. Maybe I will make some Pastrami with the other one when it surfaces again

That's really a good looking hunk of meat.  When I do a point it usually comes out kinda stringy.
