Best all-purpose bisquette

Well I like Alder for salmon. But why don't you test your self. Take a couple of oh say chicken breasts and smoke them with one type of wood, then do the same thing with another type of wood. If you can tell the difference between them then it matters. If you can't tell the difference then it doesn't matter. I for one can't tell much from one to the other. Just that they are smoked and taste awesome. My brother can tell from one to the other although he doesn't always know which type of wood it is. I like to test him to see how well he does. Now back to the alder for salmon. I use it cause that is what we always used when dad had his old plywood smoker. So really it should not matter to me, but to those who can tell the diff it is just a matter of try and see what you like. In time you will have preferences too, but hopefully for a good reason unlike myself.  ;D
