Getting ready to chronical my first brisket and I found these pics on the Nikon. I ended up using a modified 10.5 method. Persnickety GFI and PID ignorance led to a frustrating day,I had no idea where temperatures started or stopped. But lo and behold the ribs came out fine. I think you would consider them overdone as they literally slid off the bone. Still nice and moist and they disappeared fast.

EVOO and rubs

Not bad for not having a clue ???

Nice and juicy

THanks to all you on the board that helped. Brisket on the way ;D ;D

nice job. Do you need help with the PID? Do you have an OBS or a DBS?

Gus - Thanks, but I ran a couple posts and got so much help(some from you I think), I should be giving classes. I'd be embarrassed to ask for more help publicily. If I need any thing, I'll PM you ;D ;D Thanks.

Don't be. I never am when I ask, and I ask often.
