Out of pastrami and Canadian bacon so off to Sam's we go after I quenched my thirst. :P

Here's what I came home with.

That should be a start. :D

Loin has been trimmed, cut into thirds, vac sealed and tucked away in the freezer for future reference.

I'm thinking retirement may be OK.  As I type, my countdown says, 5 months, 1 day, 8 hours, 17 minutes and 50 seconds to retirement. 8)

Looks like Pastrami is in your future.  I like the canadian bacon also,  but I wish I could get decent pork bellies around here to make "regular" bacon.

But who's counting ... Right  ;D  I can still remember when I was a short-timer.

Retirement makes work look like work.  Work in retirement is hunting, fishing, and doing something with the proceeds of your trips, curing, smoking and drinking beer while you are doing the work..  Just got back from a month of moose, elk hunting & a few wobblies.  Knocked down three of each, to be shared with 3 others.  Deboned & wrapped took most of a day.  A lot of cured & smoked meat is in the future.  Besides wild meat, I do enjoy my Alberta beef & pork.
what can't be smoked can't be eaten
