WOW...  Pig looks Grrrrrrrrrrreat!

Up till this year the cajun microwave just roast the pig.

With the smoke, I think it was the best pig we have had.

Looks like it DRANK UP some smoke!  Awsome.

Next time we do it, I will put a diverter shield to send the smoke down instead of straight into the pig.

There was a section in the side of the pig that it made smoke jerky out of it.

Glad you posted about the smoke pistol, I'd never seen that before.  I searched it up and it sounds useful.

Also searched back through these forums for it and found Caneyscud referencing it with something called a Smoke Daddy.  The smoke daddy lets you use any wood fuel you want, and can get into chip/pellet (small enough) form.  There is also a DIY version of the smoke daddy on the instructables site.  The drawback seems to be that the smoke daddy's combustion chamber is aluminum and could release aluminum oxides into the food...

Do you guys know of other smoke generators like these?
Also, why did you pick the pistol over the daddy for the redneck cajun hog microwave?

Thanks!

Glad you had a great time.  Food looks fantastic.  I miss the good old days of a deer camp.

I don't think you have to worry about the release of aluminum oxide (aka alumina) from the smoke daddy.  Alumina is a very durable, inert, and a nonvolatile ceramic.

Not Bad for a Beginner!! ;D So I am guessing I will be getting a call on how to make your own Hams. That's a nice looking barrow and at 200lbs he should have some decent hams on him.
