Turkey Breast Questions

IS it best to brine a turkey breast prior to smoking?  Consensus seems to be 3 hours of smoke at 250 till an IT of 161 to 165.  Should the breast be glazed or sprayed with AJ during the smoking process?  Anyone have a good honey based glaze recipe?

You didn't mention Dadakota if the turkey breast is bone-in or boneness.  I have yet to do a boneless turkey breast but I have done a couple of bone-in breasts with great success.  Here is a link to how I smoke my turkey bone-in breasts.  http://forum.bradleysmoker.com/index.php?topic=18268.msg221501#msg221501

Someone will come along soon and give you help with boneless turkey breasts.  No matter what you do and how you do it ... It's all good  ;D ;D

Hello DADAKOTA,

I've done both turkey breast bone-in and boneness...

I've yet to do a brine on either, but willing to try in the future.

Thinking about doing one of each.  Still wonder about brining them.

If the breast are already pumped with a brine solution (usually containing salt and sodium phosphates), then you don't have to brine them, and you would probably get little benefit from putting them in a brine. Just make sure you read the label containing the ingredients - I have seen some turkeys and chickens injected with plain water. Those could benefit from a brine.

I'm gonna do a test run on one this weekend.  Bone in breast and already pumped full with 15% solution, so no brine needed.  Hopefully they will turn out ok, that's why I'm doing a test run.  Don't wanna mess up Thanksgiving day!!!
