Holiday Bologna

Making 5 pounds of bologna for this weekend. Having Thanksgiving early cuz we have alot of family that cant make the original Turkey day.

Using Hukki casings.

The long one is 3.5 lbs and small is 1.5

Regular collagen casing with an elastic net around it. Thus when stuffed and cut the bologna slices will have a daisy flower look to it.

I been wanting some for a few years but finally got a great deal on some  ;D

Its kinda expensive. Also goes by the name of Visco net.

Do you use the same procedure for stuffing them?  Are they any more delicate?  Would think they might be a little stronger because of the elastic netting around them.

same kind of casings. and yes with the net you can stuff tighter.

Wonder where you got those casings from? ;D ;D Guess I will have to make some more sticks now instead of making some really cool looking sausage!!

I got em in Iowa  ;D

They pretty cool and you can stuff tight.

I talked to 10.5 today and he told me about these nets man that's a neat idea!  Can't wait to see them finished

I have a 4 hour stall i'm looking at right now at 132*

Might bump to 178* to kick start it.
