Venison Slim Jimmys

Doing 5 pounds of venison slim jimmys. Going with pepper/sweet. Have the Weston stuffer going.

Here are the pics of the Weston. At the bottom of the post i will give you my pros/cons








5 pounds stuffed into 19mm mahogany collagen.


Tied and ready for smoke.



Ok Pros of the Weston.

1. 2 crank speeds
2. Opt motor
3. SS Plunger, body. 4 SS tubes. Very rigid frame. Spring loaded air valve  ;D All metal gears.
4. Easy 1 person operation with the crank.
5. Smooth non chippy shaft.
6. Canister mates to the body from the rear and sits on pins. Tilts back for easy re filling...I like this
7. Rubber non slip base pads
8. Prob more Pros, I just need more hands on time with it.


Cons

1. Leaves about 1/8 pound in the throat after the plunger has reached bottom (no biggie for me)
2. Indexed crank mateup with the spline shaft could have a pin so the crank dont slip off the shaft.
3. Kinda heavy almost 28 lbs.
4. I busted the plastic handle on the crank.
5. Weston customer service is kinda slow. But they did get back to me.
6. More to follow after hands on.

This is the first time I have ever seen a Weston stuffer. It does look kinda big.

very nice, did you have any problems with the meat blowing by the seal on the plunger?
My Cabelas stuffer leaves about a pound of meat in the bottom neck and tube

Just a small amount passed by the seal. Weston told me this is a new design for them. The plunger is stainless steel and the O ring is kinda funky lookin.

There is about 1/8 pound in the throat when the plunger is down. I really aint worried about it. Maybe thats why they made it to hold 7.5 lbs?

Got the slim jimmy done. Didnt have a chance to cut em yet cuz my neighbor wanted em quick  :D  :D
