Can the pork belly be frozen before being processed?

yes it can , most of the time when i order a case 40 lbs there are frozen , just thaw out and cure and smoke then refreeze.

Rob, what are you paying per lb for a case?  Do you have to smoke it in multiple batches?

its about $1.49 lb give or take, a 40lb case trimed up will fit in your smoker in 1 batch . click below, sorry duck man. that is a 40lb batch.
