Got 3 lbs of sweet n spicy stix going. Showing how you can get great results on hanging or racking.

My mix, eca ready  ;D

ECA mixing in by hand. This is 3 tsp for 3 lbs of meat i am doing. Normal ECA to meat i do is 1 tsp per lb of meat.

Rope before making into lengths

Some cut to rack length

Lengths over the SS bell stick. They are about 5-6" a couple smaller ones to.

NePa, looks great! I have second batch of venison sticks(honey maple) in the fridge ready to be smoked tomorrow when I get home from work. My question is what do you use to crimp the ends? What wood you use for the honey maple sticks? I measure mine 12" and tie each end, they look great but takes sometime to do. Any help is deeply appreciated.

Look great...how do they taste? Is the sweet stronger than the spicy hence sweet and spicy snack stix?

To me they taste sweet with a hint of pepper, to my daughters BF hey likes the tang of the ECA with the pepper bite.

My wife thinks more sweet than spicy
