high temp cheese shelf life?

how long will high temp chesse last without using it?   how should i store it?   ok to freeze it?

Not sure how long it will last in the fridge, but my experience is that cheese doesn't freeze very well.

From Allied Kenco's product page,

"Cheese will last up to 6 months at 34 degrees and can be frozen"

I think once you open the package you need to be concerned about mold on leftovers.  Vac packaging should help that if in the refrigerator.

We have frozen cheese (probably cheddar, mild and sharp) and not had a problem with the taste but I have no experience with any other type! That's my 2 cents!

I have had a bag in the fridge for 3 months and it looks just as fresh as the day I put it in there.  Slowly I am using it up but so far no problems.  I have not vac sealed it. 


Enough ain't enough and too much is just about right.

I had placed several bags I bought from LEMs in the refrigerator, and forgot about them until I wanted to try Sailor's recipe. LEMs high temperature cheese comes in foil vacuum sealed packages. I went to the freezer and then realized they were stored in the rear of my refrigerator. I thought it would be a slimy mess, but the cheddar was in perfect condition, I promptly stored the other packages in the freezer as the directions for long term storage instructed.

I store mine in the freezer and have found it mixes better with the sausage when still frozen.

I was at the Locker Plant this morning they had a 5 pound package of Hi temp for $20 good price or not? I haven't tried the hi temp cheeses yet, for some reason.

I don't know if all of them are manufactured at the same plant, but just packaged differently; but I can tell you that the LEM's high temperature cheddar taste like a mild cheddar. Right out of the package it feels a little waxing, but when heated or after heating the texture is about the same as regular cheddar. I was quite surprised, and satisfied.

Thats why i dont use hi temp, too much wax in it.

There is quite a bit of variance in some of the high temps.  My local butcher sells the stuff for $2/lb, well his stuff doesn't taste no where as good as the stuff from butcher packer.  I havn't tried the allied kenco stuff, but was impressed with the flavor on the butcher packer stuff I bought.  No issues with freezing, and I agree it works much better if frozen, seems to stuff better as well.

I have tasted the high temp I get and it had no taste or feel of wax.

I have tried butcher and packers cheese it was good but there was a 255% tarrif added on to ship to Canada so it was way too exspensive. Now I get mine from Ferrari and sons. It is $7.00 a lb and it is sent to the nearest border crossing for me to pick up. I am going there tomorrow to pick it up. This way I can avoid all tarrifs and duties legally. It is only I hr. away and we do some grocery shopping at the same time. A lot of our favorite things can be purchased in the U.S. but not in Canada. OH! someday. It also says it keeps 6 months in freezer.

Sorry i did not get on here earlier.  Have bag from butchers and packers that has been in 34 degree ref for 1 1/2 years.  Its goiong into venison summere sausage tomorrow.  Will reply again in a week to say if i am on the pot or hospital or enjoying.
