pretty sure i'm getting a smoker for xmas.  got 4 deer in the freezer.  mainly going to use it for deer sausage and sticks. 

any good venison snack stick recipes out there.  any guidance will be helpful.  still getting used to this site.

Welcome and here is a recipe that I got from somewhere on this site.
November 28 2010 Outside temp 34. Made venison snack sticks. Mixed up night before
and put in frig. Soaked casings in 1 cup of water to 1 TBSP vinegar to soften up.Took out
and let get to room temp then into smoker at 130 for 1 hour then up to
150 with 2 hours of oak smoke then to 160 for 2 hours then to 170 until IT hit 152. put in ice
to cool. recipe was;
4 lbs vension
1 1/2 lbs ground pork
1 tsp cure #1
1 1/2 tsp black pepper
1 1/2 tsp garlic salt
1 tsp cayenne pepper
1/2 tsp paprika
2 tsp red pepper
3/4 cup soy protein concentrate

1 cup cold water
3 Tbsp canning slat
2 tsp sugar
2 tsp tabasco

Mixed salt water sugar and tabasco until salt and sugar dissolved then blended with other dry ingredient
then mixed with meat. Flavor was great don't change anything there.Took 3 1/2 hours.
