Hey FLBentRider....  just curious, what do you mean by "Smithfield" cryovac?  Being in London, UK, It tweaks my interest as I do sometimes buy my meat from "Smithfield Market".... which is a pretty unique place by any stretch of the imagination.  It's a meat market that has been in the same place more or less for the past 800 years!

Wonder if it has anything to do with it?

Went to the store to pick the belly up and they did not have it.  Manager said he called 3 stores and they did not get any either.  Said he will order again tonight and hopefully will get it in tomorrows truck.  ::)

Smithfield Foods is a major pork processor in the U.S. ("the world's largest pork processor and hog producer").   Been around a long time.  There is a lot of pork history in the U.S. associated with the Smithfiled name, starting with the town by that name in VA, since colonial times.
