Roasted Cheese ........ My First Mistake of the Year ;D

I wanted to Cold Smoke this.





I had my cold smoke adapter on my smoker and was too lazy to change it.

Last thing I smoked was some Sausage. My PID was set in steps for that process.

I set the PID to 85* and turned on the Smoke Gen and the temp was holding fine so

in went the cheese. At the 1 hr mark I checked on the cheese and rotated it and

everything was great. At the two hour mark I went to remove the cheese and had

Cheese Sic-cicle's. Yes they were SIC! I had the PID set for an 1 1/2 hour drying time

on the Sausage and was so Happy the cabinet was holding the temp that I forgot to

change the time on that step to 2 hours. After 1 1/2 hrs it shot up to 150*. ;D

I had a cheesy mess in my smoker and some cheese gone bad.









I saved what I thought was still good. I hate when I screw up. (Only time this Year ;D )

Chop it up and mix some BBQ sauce in...

Works for brisket 'mistakes'!    ;D

Bag up all them cheese cicles and save them they work great for adding a little added flavor in a fondue

One whole piece of Swiss just disappeared.

I think if I would have waited very much longer to check on things,

I would have had a Cheese Fire! It was sizzling in the Cabinet.

I'd say with only 17 days left in the year and this was your first mistake you've done well grasshopper!  And you might have invented something? "Cheese Sic-cicle's" Cool!  ;D

As I was cleaning up the mess I would pick a piece of cheese every now

and then to munch on. I stopped when I started BURPING a lot. ;D

The salvaged cheese and "drippings" should go good on pizza or on top of hot chilli.

Don't waste it. you'll think of a use.
