Wheels are turning on new smoker project!!

This gas fire unit was given to me. I'm doing electric with propane burner and installing pipes for steam. I have a steam generator for my brew system and
figured on using it to steam sausage.

Finally got some time plus needed to smoke a large patch of sausage for my son's wedding






Pid works great I can't believe the temps. 25 lbs. of sausage when off without a hitch.

Basics
2700 watt 240v element
control panel
1st switch= power
2nd = start
3rd = power up Bradley smoke gen
4th = power convection fan
5th = power air pump for pellet smoke gen
When IT reaches set temp shut power off to the PID

scoring that one for free.
Just for curiosity sake, what skins did you use on these smoked sausages, they look great.
I am also very interested in your steaming idea of sausages.

Casings are 35-38 mm it will be cut in bite size with maybe some bbq sauce.
I'm rethinking steam, but I'll probably do it later. Need more time

If you can reach 225+ and you add the steam generator, try some RIBS in there.
