Came home this evening and there on the front doorstep is a box.  I recognize the sender is my friend from Lafitte LA.  I had helped he and his wife to accomplish something they had been wanting to do for quite some time.  Inside the box was a book I had lusted after for the last 3-4 years and wouldn't pull the trigger and buy it.  The name of the book is "The Encyclopedia of Cajun and Creole Cuisine" by Chef John Folse.  This one is a little more special.  It's AUTOGRAPHED!!

Thank you so much Ken and Laura!

Ray,
You're gonna love that book.  Zydeco music lover huh?  3 years ago I booked Rocking Dopsie Jr and the Zydeco Twisters into a concert here in Kentucky.  People were so blown away by them that I still have people asking when I'm bringing them back.

KyNola....I got my copy of the book several days ago.  I showed it to my sister, she couldn't believe how heavy it is.  She took it in the bathroom and called out, "Would you believe that book weighs 10 pounds!!!"  The book is awesome not only for the recipes BUT the history and background of Cajun and Creole cooking and life!!!

I treasure the book and thank you most sincerely for bring it to our attention!!!

Yep, failed to mention the size of the book in my original post.  Over 800 hundred pages long.  The first 125 or so pages is nothing but history.  Over 700 recipes.  Has the most beautful photos you have ever seen.

Glad you're enjoying it Ray.
