Hi All
First time today smoking. I just got my Bradley Smoker yesterday and set up out side in the old milk house its -25 outside so lets see how she goes. All I could find was pork chops so I'm going to try 1 hour of hickory and then let them cook at full temp. Its been interesting reading all the posts and seeing photos so ill try get some up of my Manitoba Canada winter setup. I did try this morning in the basement with the dryer vent but now the house has a strong hickory smell LOL. Just wanted to say Hi to you all and thank for all the interesting posts that made me go out and buy the 6 rack digital. Thanks Chris :)

Hi CanButcher - Welcome to the Forum.
Where about in Manitoba are you?  Are you in the southwest?  I got a DBS 6 rack for Christmas and am just starting out as well - still haven't tried anything yet because of the temp's because I get to do it outside... :-[

Hi there
We are up in the Arborg area about 120 klm north of Winnipeg. The building is not heated but does keep the wind off. It was -25 this morning when I started and Bradley would only get up to 210F later on in the day it got up to 250F but no more than that. The pork chops smell and look awesome though. I have not tried them yet because its to soon for supper. Good look with your first smoke

Never too soon for supper or too late for breakfast

Looking good there Canbutcher.  I can almost taste them through the screen!

OMG that was the best thing I've had for a long time. They were great I think I could have smoked a little longer. I just set the smoke for 1 hour but they were still awesome. They definitely had a smoke taste. I have not had smoked meet for a long time I just remember the old wood BBQ food always tasted better. Cant wait for the next attempt

CanButcher - I am out Brandon way - Those chops looked awesome!  Hope mine turns out half as good looking!

I'm sure they will. This was my first time and I was not sure what i was doing I just put a little pepper on and tried it out. Very impressed with the taste. Going to try some Hi Mountain snaking sticks I got from Cabelas in Winnipeg yesterday. Hope it gets warmer soon. Good look with the pork chops highly recommended
