The Sticks Continue

A friend wants 5 lbs of sticks with 1/2 lb of poke cut in  :o okee dokee.

Ground some poke butt for him. I keep my grinder blades, plates in rice to keep moisture off em.



My mix, No ECA this time.



I finally used my water stuffer. Did really good on 5 lbs in just about 21 mins. Faster next time being i figured out the water in water out stuff  :D
Only leak i had was my own doing by not having the water connection tight. Other than that no runs drips or errors  :D

Looking good Rick! Haven't tried my Dakotah yet, so you do like it? I was going to return it but the guy at Butcher and Packer told me that I should keep it for when making the small sticks.

Keep us updated with more pic's.

Still can't slide them snak casings onto my stuffer tube.

Have to manually load it. Guess I'm holding my tongue right or something.

I like it, works like they say it does.

One thing that i am going to do is put better ball valves on like Kirby has on his water stuffers.

well then hold yer tongue the other way and close yer eyes  :D

Anyone run snack stix out of the Weston 7lb? How was that experience?

How do you return the piston for a refill of meat on that stuffer. I saw one promotion showing that they lift the front end and it slides back?? Did you try to send the piston to the back end after stuffing the sticks? ???

Yeah you can tip it back or just crack the release valve and the water sucks the piston back itself. Works pretty good but will be better when hard plumbed like yours. The valves they give with the stuffer are not that great.


Got the sticks hanging in my favorite hanging place.

See even i like wrinkles  :D

That is interesting. I have never lifted mine up to see if the water would suck the piston back. I kind of doubt if it would work because I make my O rings too tight. I never want it to leak water into the meat. Very interesting though. Oh! by the way good looking sticks as usual!!

The older one i had only had 1 O ring and leaked, this one has 2. No leaks around the O rings. Next time i will do a video of how the release valve pulls the piston back. If i understood hydraulics more i give better details.

Looks good.

The times that I used my Dakota, I would set it up on the end of the counter. Then put a food tub on a chair, and extrude the sausage into the tub below. It made it easier for me to control the sausage. At my age, my eye/hand coordination is a bit off.  :)
