Spaghetti Corn Casserole

This is ridiculously easy to make... And very good.    The original recipe is a bit bland, so this one was kicked up a number of notches.


This is a double batch.

Preheat oven to 325°.

In a large covered greased casserole dish, layer:

- Stick of butter, cubed
- 2 cans of corn with liquid
- 1 onion, diced
(at this point, I lay on some spices, BBQ rubs, Soileau's, garlic salt, Goya Adobo, black pepper)
- 1 pound uncooked spaghetti, broken into thirds
- 2 cans creamed corn
(spice it all up again - the more the merrier)
- 1/2 bag of shredded cheese

Cover and toss into oven.  Set timer for 20 minutes.

At 20 minutes, haul it out and carefully stir. More like 'fold' - you are trying to get the spaghetti submerged.

Cover and back in the oven.   Set timer for 20 minutes.

Repeat stir/fold/cover.  Set timer for 20.

At the 60 minute mark, give it a few more good stirs, incorporating the rest of the shredded cheese.   Turn off oven and leave covered for a bit - it will still be boiling hot for a good hour or so.

The liquid from the corn steams the spaghetti noodles, and the starches released from the pasta thickens the casserole.   (and the cheese helps glue it all together)

I'm not usually a corn casserole fan, but I'd eat that!  Looks great!
Is it bad if my wife refers to the smoker as "The Mistress"?

How big of a bag is that half bag of cheese?

Squirt..........I copied that to my recipe file and printed off a copy.  I'm going to try it with a bag of 3 cheese blend.
 
 
OU812.........I think it's a one pound bag.  half in the original layering and the other half folded in later.

If you can't smoke it.....you don't need it!!!

Correct, just a 1 pound bag of shredded (whatever) cheese.   I used sharp cheddar in this one.

You can add to it if you like...    Crumbled bacon, sausage, etc.

Using some of that 'fiesta' corn w/ the diced chiles would really add some zip.

With crumbled bacon and using the fiesta corn instead of regular corn.......friends, we just moved to a whole different time zone.....known as the yummy-in-my-tummy zone!!!   ;D

Only question I have (I'd be making adjustments/substitutions for ingredients anyway), is, what size cans of corn and cream style corn?  They have about 4-5 sizes at the stores here.

I used the Del Monte 14.5 oz cans.
