Black-eyed peas, where have you been all my life...

Someone will have to give me their favorite Hoppin' John recipe so I can try it sometime..

Sorry standles,  This was one of those 'busy evening dump & cook' recipes.  ;)

Guess that means you've never had Trappey's brand Field Peas either?  Trappey's is another good brand of canned vegetables.

I have seen a few Trappy's cans at a nearby IGA..

Pickled jalapenos or something like that.

Jan just made some the other day with andouille and home smoked tasso added for additional flavor.  I'll see if she has a recipe or just winged it. (Think black-eyed pea jambalaya)

Yea man! You need some gunpowder rub or Glory blackeye peas...I can hook you up with the good stuff!  ;)

Pat, here you go.
Jan's Hoppin' John
In a stock pot or dutch oven, brown 1 pound sliced andouille or smoked sausage.  Add 1 large diced onion and saute.  Add a finely chopped jalapeno.  Add 3 cans of black-eyed peas and 2 cups of cooked rice.  Jan used brown rice.  Lastly, add 1 can of chopped tomatoes.  You can season accordingly with something like Soileau's if needed. ;)  Heat until all is heated through.  Serve it up with some cornbread and you're good to go!
