Ribeyes, gunpowder and the red stuff

Woke up this morning and looked outside and there was more of that darn white stuff. Enough is enough, I moved away from Rome, NY years ago to get away from it.  >:(



Thought about what to do today and realized that I was the only one of the Alabama Amigos that never tried "gunpowder" rub. So off to the market and a quick call to Tommy to see where the heck they kept it in the store.

Finally found it and the butcher said I should try their other rub also. He said in fact, a mix of the two of them was very good. So I bought both rubs and a couple of bone-in rib eyes and going to make some Cowboy steaks (blackened ribeye. Actually with the red rub it was more like reddened ribeye.)

So I first rinse off the ribeyes and patted them dry, slathered them with some Cajun Hot butter, mixed the gunpowder and red rub, and applied it to the ribeyes.

All rubbed and ready to go.



Since this smokes a lot I did it on the side burner on the gas grill. First you heat a pan until it gets very hot, throw on a few globs (technical measurement term ;D) of butter. Should sizzle if it is hot enough. Throw on the steaks, about 5-7 minutes each side and adding butter as needed.
Wife ask what sides we were having. Sides???? So I made some salt potatoes (aka syracuse potatoes).Wife asked what vegetables or greens. I said potatoes. She promptly informed me that potato was not a vegetable. (Hey, my definition of the food groups are meat, potatoes and alcohol ;D  )
So I sliced some tomatoes, onions,some not so young lettuce, and added some vinegrette. Not enticing, but hey I got meat getting cold.

Started eating and didn't have time to take too many money shots.



I've made this a number of times, but even the wife said this was the best.

I love the gunpowder rub...   What is the 'red' stuff like?

Hard to describe since I had it mixed with the gunpowder. Had a little bit of heat to it.

I find the gunpowder hard to describe!    Sounds like a nice mix.

did you build that enclosure, or buy it?  That looks awesome.  I would like details if possible.

I live in CA but keep my bradley in the garage, when not in use, and would love to have an enclosure like that to keep it in so I don't have to keep dragging it out every time.

I agree. Love "Black'en" food, just a hassle to do.

I got a bunch of gunpowder in the garage by the reloading bench.  ;D Do not think it would be very good on a steak though.  ;D

Those steaks look great Gus.Wish you had better weather for cooking.  I cold smoke those steaks about an hour with Hickory before grilling--- awesome.  I sure would like to build an enclosure like yours.  Could you PM or post some details ?
