Thanks to the BLSH and the Forum....

I have acquired a new and great sickness!!!!









Bought the bags, used the foodsaver "sleeve cheat", waited 18 days....

Just amazing.   I cannot believe the difference it makes.

Some much to learn here and so little time.

This was the label:



Smoked it with hickory and than grilled it on very high to sear it.  Just added grilling salt and a good bottle of cab... Well more than one.  :-)

Sooo....did u dry age it? Or was it sealed in a bag for 18 days? And what is "Sleeve cheat"?

Bought the special bags here:

Used the foodsaver bag inside of the other bag...about a 4 inch strip.   There was a post about it.. Just can't find it.   After some trial and error it worked great.

Looks good, I got may bags in some time ago but haven't tried this yet.

How many tries did it take to get this method, FoodSaver sleeve cheat, to work for you?

I did not ruin any bags.  I used the pulse feature and rearranged the bag until I got a good vacuum.  You need good contact between the bag and the meat.
