Storing Back Bacon

I have smoked a few pounds of back bacon/Canadian bacon and have cryovaced it.

How long I could store it in a fridge?

In the refrigerator, I generally will only store it 7 - 10 days, from the day it was cooked or taken out of the cure. Since it is vacuum sealed, it appears you will not be using it any time soon, so I would put it in the freezer for longer storage. In the freezer the storage will be at least 6 months, but I have stored it longer then that.

Thanks Haberno Smoker - I will toss it into the freezer right now.  Bacon that you buy in store is cryovaced and seems to last for quite awhile if left unopened - that's why I wasn't sure.

I tend to lean on the safe side. Even bacon that I purchase form the supermarket, I will not hold in the refrigerator for more then 10 day until I freeze it.

I froze the back bacon (Canadian bacon) and have since used it.  I didn't notice any difference in texture after it being in the freezer and the taste was still all there - which is what I was worried about.

Just my 1.5 cents ( i can't afford 2) I love love love habs CBB but I find the texture after frozen to be different. I much prefer it before it is frozen. But it still rocks.
I like to walk threw life on the path of least resistance. But sometimes the path needs a good kick in the ass.

Quarlow - I don't know if it makes a difference in texture but I vac sealed it and double wrapped it in plastic on top of that... I was really worried about the texture but mine came out of the freezer just fine - just had some with eggs for breakfast this morning ...man was it good!   :)

I've never had a problem either "Q". I only take the "IT" to 140. When I used to take it to a higher "IT" it was dryer.

I usually do about 30 lbs at a time. I slice it all on a slicer and vac pac it in 24 slice packages.

It always turns out awesome.

Well I did vacseal it but I didn't slice it. I'll have to try slicing it and see what happens on the next batch. Which won't be long as I only have one piece left and I just had a request for homemade eggMcmuffins for this weekend. Thanks Mike, Thanks Umbre. Oh yeah  "Umbre" you know you are part of the family when you get abbreviated.
