Just wanted to say I really enjoy the new digital smoker I bought and joining this forum has given me hours of fine reading. I live in northern Ontario and do a lot of fishing, both summer and ice fishing. So buying the bradley smoker just added to the way I serve up my fish.

Since I bought it I have smoked a few Speckle trout, cheese and bacon wrapped chicken breasts. All came out wonderfull. Glad to be part of such a great forum

No it was three separate occasions.
The cheese was smoked when it was -30°F  and I still was a bit worried about getting a big globb ball   ;D

there is a rule about fellow canuks ya know,we dont use Fahrenheit ,we use metric (confuses the yanks lol).i smoke my cheese at around that to lately.(30 f is just around freezing for non bilinguals ,lol f vs c)i have a cold smoke attachment so i wont have to worry about the blob factor,but if you keep your heat off and just run the smoke generator ,at 30 you should have no worries.

at -30 (-34 c)id be worried about freezeing the cheese .i only seem to get about a 10 degree above ambient inside my cabinet.
