Nekkid St.Louis Ribs with Gunpowder & Billy Bob Que's Rib Rub

I had two racks of St.Louis style pork ribs. I divided the racks in half and rubbed one with Gunpowder and the other with Billy Bob Rub. Then vacuum sealed and placed in the fridge overnight. I smoked them in the Bradley for 6 1/2 hours at 220F with 3 hours of Jim Beam pucks. Thanks to Southern Smoked for the rubs ;D Both rubs were excellent. The Gunpowder is awesome! Now I know what you guys are raving about. The Gunpowder really penetrated the meat. The Billy Bob Rub was also good with a nice heat to it. And here are the pics....

Natural Gas 4 burner stainless RED with auto-clean
2 TBEs(1 natural gas & 1 LP gas)
OBS(Auberins dual probe PID, 900w finned element & convection fan mods)
2011 Memphis Select Pellet Smoker
BBQ Grillware vertical smoker(oven thermostat installed & converted to natural gas)

Looking good, my ribs come out of foil in 20 minutes and then back in for 1hr or so.   ;D

What IT did you take them to?

TR...I took them to 170F IT because my wife had to goto work at 2:00pm and I wanted to feed her some lunch before she went. They were still pretty tender... but not pull away from the bone tender like at 190 IT ;D

I did something I've never done and that was after the 3 hrs of smoke and into the foil I bumped the PID up from 220F to 240F. Well after 2 hrs they were done so I quickly sauced them and put um on the grill for about 10 min a side to set the sauce. I thought I had messed up but they came out pretty good!
