Post Heat Wave Cheese

Well after yesterdays heat wave of 57* and todays high of 25* i am dedicating this cheese post to yesterday  :D

Couple of cheeses for a friend at my wifes work.



Going to get apple smoke for 3 hours. No there is no heat, the reflection is from the heat shield.

Well being the experience smoker you are NePa I'm sure you know this already but this is what I learnt on my very first cheese smoke. My first batch I should have turned the cheese's a couple of times to get even penitration on the smoke and good colour all around. My first batch seemed stronger smoke favoured on one side because I never flipped them around during the smoke time.

Thats why i put the queso on the other side of the smoke tube so it dont take the smoke as fast.

I turn cheese about once per hour.

Got em done ready to wrap and date. I hope the lady who gets the gouda can hold out  :D

I did gouda with apple last time and i loved the gouda .
