bacon hanger

i have made bacon with good results, no complaints. but i see bacon hangers on the web .what if any improvments would i get with them.

I have some and used them once.  I don't see any benefit. It seems easier to me to just put the bacon on the racks and let it go.  The only advantage I can see is if you do a whole belly, itght fit without cutting it by hanging it.  But I prefer ttoohave the flexiblity of rotating and turning the racks.

I guess it depends on how much you are making. I did about 9 or 10 lbs of it awhile back and they were cut into 3 x ~3lb and 1x 1lb.  I did the 3day triple smoke (actually i condensed into 2 days) and the goal is to dry it during that period, so I didn't want each slab dripping down on to a lower one when it came time for the final (hot) smoke. I had two hangers, and was able to fit two pieces per hanger.

I've also done two regular hot smokes for a buddy (aka not the triple smoke), one where we only had one rack full, and the second time we had two racks of 4-5 lb belly slabs. There was a lot of moisture but the bacon still came out good.

One thing I will say is if you hang the hanger on the Bradley rack like I did, put the hanger(s) on the rack BEFORE the bacon goes on the hanger, and locate the rack so the bacon isn't touching the sides and especially not the back (prevent a grease fire).
