NJ Poke Roll II

While the pepperoni was drying i made up a batch of OU style poke roll with an added twist.

De bone my poke



Wash the poke off real good so you dont have any bone dust on it.


Got 2 lbs of brown sugar cured bacon  ;D


Some of the dry.









Some of the wet  ;D






Hey how bout a lil more wet  :D



All in and now mix.



Got 10 lbs bagged for stuffing tomorrow. I want the flavor to come together overnight.

Got a late start after doing my honey do's

Got the stuffer out and ginourmous tube



Took the meat to the end before casing it.



Wanted to do a couple small chubs in cloth bags.


And some clear casing. Hanging to dry some.



In the smoker at 145* then up to 155* with hickory.

Hey "Pusher Man" where did you get those cloth bags? I checked on Butcher & Packer and Sausage Maker website and can't find them.
