Chicken Enchiladas

Did this cook in the crock pot, the stars of the show.



Chopped up the peppers, Thanks David, there GREAT.



Added some dried onion soup mix.



Some cream of chicken soup.



Some sour cream.



Mixed that up and kicked it up a bit with some chipotle pepper puree.



Dropped the chicken in the crock pot.



Cover with the mixed up goodness.



Set the pot on high for the first hour then set on low and about 5 hours later pull the chicken wile still in the pot, makes a great shredded chicken.



Smear some enchilada sauce on a tortilla and dump on a good helping of the chicken stuff.



Do that 4 more times and drop in a pan then cover with cheese and enchilada sauce.



Cook till all bubbly and serve.

Feedin time came and I didnt get a chance to get a picture, tried but almost got my hand bit off.  ::)

After it was all done this is all that was left.



I'll have that for lunch.  ;D

well you would want it sent your way direct out of the freezer.  Getting too hot now to make that journey again

They are really, really good.

I find my self eating the chicken stuff like a dip without then chips when making it.  ::)

Me and the hubby are enchilada freaks...never made them that way...Gotta try it!!!  :)
