A Cheezy Weekend…

A Cheezy Weekend...

But in a Good Way. I decided to smoke some cheese.



In Rack A -

1 large block of Mild Cheddar
1 Medium Cheddar
2 half blocks of Mild Cheddar



Rack B

1 Large block of Pepper Jack
2 Half blocks of Hot Pepper



Rack C

2 Half blocks of Mozzarella
1 Half block of Swiss
1 Half block of Mild Cheddar
1 Half block of Marbled Cheddar


Rack A


Rack B


Rack C



I will be using my SS Bradley Smoker with the Bradley Cold Smoke Adapter.



I'm using 2-1/2 hours of Apple Wood.



Here is a quick look after the first hour.

Pulled out of the smoker after 3 hours.



Using my Weston bags that I purchased after a posting by BLSH, vac sealed and...





Applied custom labels.

Now into the frig for a minimum of 30 days before shipping out to family members.

Nice.  I have several packages of cheese that hit 4 weeks on Wednesday.  All I can do to stay out of them.  Think I will go six weeks before hitting the first one.

Someone asked about the best place for bags in an earlier post. What I like about the Weston Bags - no print on them.
