got my maverick ET-732 on friday so i pulled a 4 pound sirloin tip roast that i had in the freezer

rubbed and put it in after preheating, did 2 hours of mesquite and after about 3 hours the IT is reading 151 F

at what IT should i pull this out and for a FTC?

Mr Walleye

I would get it out now.

I usually take them out at a lower temp. Yours will be med/well to my knowledge.

If you're looking for pulled beef, keep going to 180-185.

If you are looking for rare roast beef, it's overdone.
