Yeah, that's pretty sneaky OK.  It makes sense that the outside of the meat, containing the most bacteria, ends up on the inside.  Rare is bad news  >:(

I just checked the Swiss reg on the use of transglutaminases in food production (Switzerland is not in the EU)  and while it is allowed the products must be clearly labeled as such to prevent confusion by the consumer with natural meat chunks.  From a chemists point of view I find the use of these enzymes pretty damn clever but from a consumer point of view - it really sucks the big one.

I think it's what holds some hot dogs, fishcake, imitation crab, and stuff like that together.  You can buy it on Amazon; they say you can use it to "mix Elk, Llama and Yak to create a Exotic Mixed Grill Filet." How weird is that?

I wonder what the long term effects might be...it is used in chicken nuggets, imitation crab, etc. and if the EU has since banned it, there has to be some evidence of a health hazzard other then just trying to rip the people off with misrepresenting cuts of meat...

I will certainly be watching out for perfectly rolled/round steaks next time when I got to the store.  Luckily, I don't buy steaks very often because I buy my beef from my uncle and have it butchered by another uncle.
