Curing Mistake?

Alright, so after lurking here for a bit I decided to try my hand at some Canadian bacon.  Used tenderloins as that was what was on sale and available.  Problem stems from me getting my ratios mixed up when putting the cure on.  I used 10% cure to weight of meat while thinking of the 10% of salt/sugar weight ratio.  The upside is that I did three batches with different flavorings and screwed up the math when doing it.  Two of the three batches weighed in at 400g and I used 4g cure.  The third weighed in at 176g and I used 17g cure.  I assume I should throw away the third batch but are the first two with 1% cure going to be salvageable or should I scrap all three and start over?

If you did not make a typo, the first example the amount of cure you used 1/100 of the weight of the meat; that would equal 4g, 10% would equal 40. You have  .88 pounds of meat and you are using .14 ounces of cure, and the third one you have a very unsafe amount. If my calculations for grams to pounds and ounces are correct; you are using four times the recommended amount of cure for the batch that weights 400g.

If you did not make a typo in the first example, and it have been less than 24 hours, the first two you can wash off the cure immediately. After washing the cure off, cover, refrigerate and let them rest for about 24 hours. Then cook them as uncured tenderloins. The other one I would discard.

I am also concerned with the weight of the tenderloins. They seem very small, so I hope my converter is not acting up on me.

Your calculations and reading would all be correct HS.  The first two I did use 1% and the third I used 10%.  Thankfully I was just waking up when I did them and used less than I meant to (which as I now know is more than I wanted). 

Since it's been almost 48hrs that they've been sitting in the cure, I'll just toss them and start over.  One thing is for certain, .0025 will not be a number I soon forget....
