Hi everyone - wondering what the popular consensus is regarding applying rub to ribs before smoking.  Is it better to do it the night before, or a couple of hours before the beginning of smoking/cooking?  I've always done mine the night before, but I'm not sure if it's a big deal or not to do it that way.  Just curious, thx!  (Doing some pork and beef ribs AND bacon bomb tomorrow in the BDS :) )   ;D

I go with the night before....even 2 days before (as long as the rub isn't too salty)...

I have always gone night before no matter which type of meat I do. Always comes out good so I figure why do any thing different.

Doing it the night before lets the flavor's set into the meat so I have always did it the night before if it was at all possible.

i usually apply a rub 12 to 48 hours  before a smoke

I've done is several ways, but IMHO at 24 hours, like what already has been said the longer time allows the rub to permeate better..
