First crack @ cheese

.5lb Gouda
2lbs of Mozzarella
2lbs of Pepper Jack
2lbs of Mild Cheddar
2 hours of apple smoke...got a little warm at the end and the cheddar started to sag a bit but the rest held up well.

Just gotta wait now :/

Really good lookin cheese, I have to make a trip to get me some, my family has eaten most of what I had...like most have said the wait will seem to take forever..

Mozzarella is the one that starts to sag on me if the smoker gets to hot.

I throw my smoked cheese in the back of my fridge, behind my stock pile of flour.  ;D

That way I dont think about it every time I open the door for a beer.  ::)

It would have been fine if I cracked the door a little at the end...should all taste good though :)
