A week or so ago I posted that I was looking for some sweet bread starter since mine went bad when we lost power from the tornados. Short time later Curt (OU812) PMd me and offered to send me some.

PS: how do I re-hydrate it? or un-dehydrate? whichever you prefer.

I have never tried to rehydrate the starter.  But I think it would stand to reason the the started started out as 1 cup and the moisture was taken out to give the remaining powder.  Would it not make sense to put the dry starter in a measuring cup and add water until the 1 cup mark?  I have 3 starters in the freezer for back up and have not tried to recover them so I am hoping that they will be OK.   Sure would hate to lose the starter.

This is how Smokin Soon did it.

To re start, added 1 cup water 110 degrees, 1 cup KA bread flour, 1/4 cup sugar left loosley covered 24 hours.
added 1/2 cup flour, as it was kind of thin.

That package was 1 full cup of fed starter and dehydrated into what you got there.

If you do the initial feed in the morning and it is showing some brisk activity you can go ahead and do a normal feed before bed. I did it in the oven with the light left on. I also think that using bottled water is important. I also would not go over 105 degrees for the water temp. In Sonny's posts he shows a temp of 118, which is fine because you are rinsing the starter jar with it. Good luck!
