Well my plan for this weekend was to smoke some polish tonight then do a corned beef brisket/pastrami and 2 pork butts tomorrow. Well while preheating for the polish my element went out on my new 6 rack digital,only had a couple of months. Luckily when I had the fire in my last one I kept the old element and that one worked fine. My smoking plans for the weekend are back on and I will contact Bradley Monday am and get a replacement element.

I sure like using the hot water bath for finishing the sausage,man that made  it  a lot quicker.
