Stuffed Chicken Breast

So I'm gathering all my stuff outta the fridge to make a Chicken Cordon bleu and I ask Taby what kind of cheese she wants in them, she repplied with great enthusiasm.

CREAM CHEESE!

Great,,,,,,,,,,,,,, I had to open my mouth.  ::)

Not that I dont like cream cheese, I love it, just never did it this way.

I wrapped the 2 oz cream cheese in about 4 layers of ham, kinda making like wrapping up a steak in freezer paper. Then placed on a hunk of chicken breast that had the hell beat outta it and rolled up.

Well got all carried away making these babys I forgot to take any pictures.  :-\

Gave them 2 hr Apple with the cabnet temp set at 260 F. I wanted the bacon to shrink and seal these babys before the heat got to the cream cheese.

Walla!



10 min rest under a foil tent wile Taby helped the old man get everything ready.

I just want to knoe what were tose metal things sticking out of the cordon blue in the first picture. Regardless, they still look so darn good.

Those are what you would use in place of a toothpick when wrapping a loin steak with bacon.

I have know idea what there called but got them from a butcher supply store, talked him into a hand full of them otherwise they sell in bags of 100.
