If this is how good it is on my first try....WOW!!

Well I just finished my first meal from my BDS and all I can say is WOW! If my first attempt turns out to be my worst, I'm in for some good eats.

Brief description of what I did....

Dry Rubbed my Costco Ribs... I know generic stuff, but.....

My Rub Recipe

3 T Dark Brown Sugar tightly packed
2 T Kirkland Signature No Salt Seasoning
1 t Black Pepper
1/2 t Granulated Garlic
1/2 t Minced Onion
1/4t Cayenne Pepper


The ribs rested in ziploc's in the fridge from 4PM Sat till 9 am today
I took them out of the bags and let them come up in temp while I seasoned the smoker (first use)
I cranked the heat to 250 and when it reached 220 I could wait no more, in went the ribs
I inserted a temp probe through the top vent into the riba on the second from bottom rack, the others were on the bottom.
The smoke started rolling, I came inside and waited, at the 90 min mark, I rotated the racks and moved the probe to the top again.
I came in and was reading the forums and in the welcome someone suggested for a first attwempt 3 hrs may be too much smoke, so seeing I am a newbie at this I heeded the advice and shut the smoke down after 2:20 of smoke, rotated them again and started to mop them with the following.

1/4 C Maple Syrup
1/2 C water
1/4 c Lemon Juice
2 t white sugar
1 1/2 T Maple Brown Sugar
1 t Ground Cinnamon
A small pinch of salt

I brought this to a boil and let simmer until it was thick as I liked
I mopped all the ribs and waited 90 min, rotated and mopped again.  Then at the end of the time I rotated and mopped once more, l removed from the smoker and let stand 5 min, plated them and dug in... Even the Mrs. was impressed :)

Ed..by the looks of things you done very well, I guess you know when the word gets out that Mr Ed makes killer ribs, you will find out that you have more friends and family then you knew...lol :D You done well...

Why yes I did, just sayin that its always good to have some notes.

Sometimes a guy has allot of things on his mind and notes help duplicate a perfect cook.

Nice looking ribs. Like was stated before keep track of everything you do to your food. I keep track of outside temp,cooking temp,what kind of smoke,how long it took,recipe I used and how it came out. Comes in handy for future cooks.
