HOT deer sausage

Made up some sausage just for me with LOTS of red pepper flakes.  :o



Only 5 lb.



Ready for the fun part.



Put in the fridge over night and this morning hang to come to room temp.



There in the smoker now.



Smoking for 3 hr with Pecan.

Interesting...    My coworker's freezers are full of ground venison.     I need to branch out man up and get that stuffer down one of these days.

I eat more deer than beef, use it for every thing that calls for ground beef.  ;D
