South African Droewors

Oh great, another smartass on the forum today.  :D :D :D
I like to walk threw life on the path of least resistance. But sometimes the path needs a good kick in the ass.

One Big Easy, plus one in a box.

Ok got the GB and lamb going.

Bonless lamb. Only need 1 3/4 lb but might as well grind er up.



My dry in the bowl.



Mixed together good.



The wet items.



Ground beef and lamb. Mixing this by hand because i dont want to render to much of the fat out. Its hot out today.

Normally i mix the dry with the wet but i'm going another route by shaking the dry into the meat, mixing well then adding the wet.

Before the dry and wet. 3 1/4 lb GB and 1 3/4 lb lamb



After


Cover tight and fridge for 24 hours. Then stuff.

Smokers are busy so these gotta sit on racks.

Need temps of 68-72* so i got em in my Cabelas 80L @70* going for 6-7 days

Dunno what a Droewor is, but that's a beast of a dehydrator!

Yes i did put 1 tsp cure #1

Yes but you need a constant temp between 68-72* with air flow.
