Ribs, beans, corn and asparagus on a Saturday night

Had found a local farm that would sell some good looking pork bellies. Their hogs are a mix breed of Duroc and Berkshire. I ordered some spare ribs and when I picked them up I got the bad news that they would no longer sell to the public. Oh well.

Here is a pic of the ribs trimmed out. I sopped them with some sauce made from the recipe that NePas posted a while back and rubbed with "Juicy Pig" rub. Going to use the 3-2-1 method.


Put in the smoker with 4 hours of Hickory. Here they are after the smoke and getting ready to foil. Spritzed with some bud light, foiled and back into the smoker.


Mixed up a can of baked beans, mustard, Worcestershire sauce and some hot sauce I picked up in New Orleans last week.


Here is the hot sauce "Bourbon Street Really Bad"


Put the asparagus into a bowl, mixed in some EVOO, paprika, garlic powder, and seasoned salt. Put in and smoked for an hour (hickory)


Here is the finished meal. I must say the ribs were some of the best I have ever tasted. More due to the breed of pig than my cooking expertise.

It all looks great Gus, but since we haven't had any sweet corn yet this year, ya know the fresh kind..How was the corn...?

Bummer your supplier wont sell to the public any more.

My pork supplier did that crap to me late last yere.  >:(
