for the 4 th am planning to do a pork roast and some Bratwurst buffalo turds,

my  thought is get about a dozen bratwurst,  dozen maybe two dozen jalapeños peppers and cream cheese.  the plan is

first is remove the casing off the brats, then mix with the cream cheese and add some onions into the  mix... then stuff the jalapenos with the sautéed mixture.. then  smoke and finish cooking

think it might be an interesting flavor and tasty

First thing that comes to mind is that a "crumbly" sausage would work better...
The ingredients sound plenty tasty, but you'll probably have to do a lot of chopping on the brats (?)
I dunno...

Sound like a good idea. I generally use left over pulled pork, but when I use sausage if it is not bulk I remove the casings and fry it first; like you brown ground meat. Then I mix it in with the cream cheese.

I do like Habs, brown the meat/cool/mix/stuff.

I do that all the time and its gooood.

Like Habs said brown the brat just like you would hamburger, the smaller the crumbs the better.

I like to mix 1 lb meat with 1 lb cream cheese and some of the seeds from the jalapenos.
